Ingredients

1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
2 tsp vanilla extract
1/2 cup milk
1 1/2 cups chopped apples
1 tbsp ground cinnamon
2 tbsp brown sugar

Instructions

Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
In a bowl, whisk together flour, baking powder, and salt.
In a separate bowl, cream together granulated sugar and butter until light and fluffy.
Beat in eggs one at a time, then stir in vanilla.
Gradually add the flour mixture to the sugar mixture, alternating with milk, starting and ending with the flour mixture.
Gently fold in the chopped apples.
In a small bowl, combine cinnamon and brown sugar.
Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon-brown sugar mixture over the batter. Pour the remaining batter on top and then sprinkle the remaining cinnamon-brown sugar mixture.
Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
Allow to cool before slicing.
