Roasted Baby Potatoes and Veggies

Ingredients

  • 500g baby potatoes, halved
  • 200g baby carrots
  • 2 medium zucchinis, sliced into rounds
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

Directions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine olive oil, garlic, rosemary, thyme, salt, and pepper. Mix well.
  3. Add baby potatoes, carrots, and zucchini to the bowl, tossing to coat the vegetables evenly with the seasoning.
  4. Arrange the vegetables on a baking sheet in a single layer.
  5. Roast for 25-30 minutes, or until the potatoes are tender and the carrots are slightly caramelized, turning halfway through.
  6. Remove from the oven and sprinkle with fresh parsley before serving.
