Hearty Beef Stew recipe

Ingredients:

  • 2 pounds beef stew meat, cut into cubes
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups water
  • 3 carrots, peeled and sliced
  • 3 potatoes, peeled and diced
  • 2 stalks celery, chopped
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

 

Instructions

Directions:

  1. Toss the beef cubes with flour to coat evenly.
  2. In a large pot, heat the olive oil over medium heat. Add the beef and brown on all sides.
  3. Add the onion and garlic to the pot and cook until softened.
  4. Pour in the beef broth and water. Add the carrots, potatoes, celery, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours, or until the beef is tender.
  6. Season with salt and pepper to taste.
  7. Remove the bay leaf before serving.
